Coconut Oil - Ways to use it

I think I take it for granted that everyone knows of ways to incorporate coconut oil into daily eating. Here are some of my favorite ways to add coconut oil to food:

- mix 1 tablespoon into smoothies
- add 1 tablespoon to oatmeal
- use it as you would butter on toast
- mix it in salad dressings
- melt it in soups

I have experimented using coconut oil wherever I use oil...this does not always work as coconut oil has a sweet, fragrant flavor. When I cooked hash browns in coconut oil, they were a little sweet and they smelled like deliciously sweet. These attributes would have been great in a dessert or sweet sour sauce, but not in hash browns. I am a little bit more cautious now...I also notice that I prefer to not use coconut oil cooking as much as I enjoy it right off the shelf in foods.

I think you should experiment and test using coconut oil in different foods to see what you like!
