Coconut Oil -- Saturated Fats and Inflammatory Diseases
I love coconut oil for the health benefits and I also happen to have multiple sclerosis (www.mylifewithms.com). I read a really interesting collection of articles the other day that may put down my new favorite elixir...coconut oil.
Coconut oil is made up of primarily saturated fat. It is different from most saturated fats because (you guessed it) of medium chain fatty acids rather than long chain fatty acids. This made me feel good about regularly consuming coconut oil.
However, saturated fat further inflames inflammatory conditions like heart disease, multiple sclerosis, etc. It doesn't have to do with the content of of the fat but more of how it acts inside your body. I am trying to find a piece of data that refutes this idea so I can continue eating my new favorite coconut oil. Until I do, I just may have to put my 3 tablespoons per day habit of coconut oil to the side!
